Triple Seafood Chowder

Seafood ChowderIf you have ever lived up north then you would know that the best thing that you can find and eat up there is seafood. It’s true that you can get it down in the south, but try comparing the size of a lobster that is from Florida to the size of a lobster that is from Maine. There is a big difference! Well to go with all of that great seafood you have to have a great dish.

Triple seafood chowder is an excellent dish full of different types of seafood, some of which you can only get up north. It doesn’t take too long to cook and it is great if you are going to be feeding a large family. Everyone will be raving and asking for more once you make them this great meal.

Ingredients Are:

1 1/4lb. potatoes
2 onions
Small piece of salt pork
2 tsp. thyme
2tsp. black pepper
2 1/2 cups clam juice
1lb. haddock or white fish
1-2lbs. scallops
1lb. shrimp
1/2 cup whipping cream
pinch of salt

Directions Are:

Peel and dice in small cubes 1 1/4 lbs. of potatoes. Finely chop 2 onions. Dice in small cubes a small piece of salt pork and fry until crispy. Discard salt pork but add onions to pan and saute with 2 teaspoons of thyme and some black pepper.  Add potatoes and 2 1/2 cups of clam juice. Simmer for about 15-20 minutes until potatoes are tender when pierced with a fork.

Add 1 lb. of haddock or white fish and 1-2 lbs. of scallops. When fish and scallops have turned almost white add shrimp. While stirring add 1/2 cup of whipping cream and 1 cup of light cream. Stir until heated through and add a touch of salt to flavor.
